A Mass of Christian burial for Evelyn Theresa (née Ceres) Appel, 81, of Caldwell, formerly of Fairfield, was celebrated at St. Thomas More Church in Fairfield, NJ. Evelyn was born in Newark, raised in Bloomfield, worked at her father’s farm stand in Bloomfield, loved art and was a trained, accomplished artist. She raised her four children in Fairfield and in later life was a teacher’s assistant at St. Thomas More Preschool in Fairfield.
Evelyn had great faith in the Resurrection and the intercession of the Saints. She was a daily communicant until her failing eyesight forced her to give up driving. She made sure at least one of her four children would always take her down for the Sunday liturgies at the Marian Manor. She prayed the rosary daily and would offer additional ones for those in any kind of need. Evelyn loved her Italian heritage. She looked forward to her Italian Tribune every week. When she could no longer see well enough to read it herself, one of her children or grandchildren would read it to her. She would use a special magnifying glass to see the pictures. The daughter of the late Edith and Gerardo Ceres, she was predeceased by her brother Gerard Ceres and her sister Marie Scaringella. Evelyn was the loving mother of Kurt, Michael, Karen and her husband David Moore, and Lauren and her husband David Greulich. Other loving survivors are grandchildren Nicolette, Matthew, Alexandra, Corinne, Kyle, great-grandson Dominic, nieces Sr. Regina, OP, Samantha, nephews Peter, Anthony (Sarah), grand-nephews Nico, Luca, Matteo, and brother-in-law Sal Scaringella. Evelyn was looked upon as the last matriarch of the family.
